James K. Bonner, Chief Chef & Bottlewasher, Grate Kakes, Inc.
Background & Inspiration
James K. Bonner was born in Nashville, Tennessee, the country music capital of the world—though it was the rhythm of the kitchen that was music to his ears. The clatter, chatter and aroma of his Grandmother’s (Allean Arnell) cozy kitchen infused her home, which James shared with his mother during many of his childhood years. James studied and assisted his grandmother in the kitchen while she prepared many meals for their large family. Breads especially biscuits with homemade preserves and desserts were made from scratch. Produce was fresh from the farmers market. Meat and fresh greens came directly from James’ father’s farm. It is these magical memories (and secret recipes!) that inspire James’ culinary creations.

Experience
James has worked in the food industry since 1987. He began as a cashier for HEB Grocery in 1997, moving through the ranks to a management position, including doing food demonstrations.
In 2006, James became the chief chef and bottlewasher of Grate Kakes®, a custom cake company named after his signature carrot pineapple cake. And yes, he does grate the carrots by hand to ensure the perfect texture.
In 2010, James took a position teaching both technical and pastry classes to consumers at William-Sonoma’s Highland Village location. He also demonstrates the store’s upscale appliances and gourmet food products, boosting the sales of any items he uses.
Education
In 2010, James earned an Associate of Applied Sciences degree in Culinary Pastry from Houston Community College. He is currently working on his Associate of Applied Sciences in Culinary Cuisine. In 2012, James plans to attend the Conrad N. Hilton College of Hotel & Restaurant Management at the University of Houston — among the world’s premier hospitality education programs. |
